Your first year of updates is included. After that, an update pass is $199 a year — it keeps new features coming for another year. It's optional. Skip it and the app keeps working exactly as it is, forever, with the data you have. Pick it up again later and you get everything you missed. No auto-renew; it asks you.

Soon your customers will be able to view the proposal, sign it, pay the deposit, and give you the final count on a web page. Payments through the portal cost 1% of the event, capped at $50, and only when the customer pays there. You can absorb it or pass it through. Checks, Venmo, and your own POS cost nothing.

Because a subscription means you're renting your own records. Every competitor charges $1,200–5,000 a year, forever, and two of them fine you for using a different payment processor. Full Table is built by a caterer who got tired of paying rent on his own calendar.

No. Full Table works without any hosted piece: proposals go out as PDFs, customers sign them however they sign things now, payments get recorded by hand or with a Square link. The portal is a convenience, and its fee only exists when a customer pays through it.
